Summer Chicken Salad Wraps

Summer chicken salad wraps served on a plate

Our summer chicken salad wraps are great for a light, easy meal on a hot summer’s day.  These wraps are delicious and you can prepare them ahead of time and keep them in the fridge for later. You can even use leftover chicken if you have any from the night before!

To make approx. 4 wraps:


Creamy Garlic and Herb Dressing

Greek Yoghurt or Sour cream – 5 tbsp

Garlic powder – ½ tsp

Chives – 1tsp finely chopped

Dill – ½ tsp

Onion powder ½ tsp

Salt and pepper – to taste

Lemon juice – 1 tbsp

Summer Chicken Salad Wraps

2 grilled chicken breasts or approx. 300g of cooked chicken, sliced

1 tomato – chopped

A handful of Cucumber – chopped

Handful of sweetcorn

2 handfuls of thinly sliced iceberg lettuce

Salt and pepper to taste

1 tsp Paprika

Olive oil 1tbsp

4 tortilla wraps


  • Step 1 – Prepare the chicken breast:

Heat a griddle pan on medium heat. Rub chicken breast with olive oil and season with paprika, salt and pepper (to taste). Cook for 3-4 minutes on each side or until cooked through. Pop on a plate to rest.

Note: If you buy cooked chicken, you can skip this step!

  • Step 2 – Making the dressing

Add 5 tablespoons of Greek yoghurt or sour cream to a bowl. Finely chop the chives and dill and add them to the bowl (you can swap these for dried herbs if you like). Start adding the powdered garlic, onion, salt and pepper. Lastly, add one tablespoon of lemon juice and mix until combined, you can add additional lemon juice for a runnier consistency.

  • Step 3 – Preparing the salad

Slice the cooked chicken breast into strips, chop the tomato, cucumber and lettuce and put into a large mixing bowl, then add the sweetcorn. Pour the pre-made dressing into the bowl and give it a mix, making sure all ingredients are covered.

  •  Step 5 – Assemble the wraps

Lightly heat the tortillas in the microwave for approximately 20 seconds; this will make the wraps more flexible and prevent them from ripping. Layout the wraps and start dividing the filling between them. Roll each wrap by folding over the end pieces at either end of the filling, lift the side of the wrap which is closest to you, tuck it into the middle of the wrap and roll the tortilla away from yourself. Repeat with all four wraps.

  • Step 6 – Serve and enjoy!

Slice the wrap into 2 halves so it’s easier to handle, grab a plate and enjoy!
