Cupcake Recipe for Alzheimer's Society

On the eve of 13th June, fundraisers will be baking up a storm as they prepare for Cupcake Day for Alzheimer’s Society.

To help raise vital funds to support families living with the effects of dementia, workplaces, businesses, local services and community groups will be setting up bake sales and selling cupcakes.

Just in time for Cupcake Day, we wanted to share with you, a very easy cupcake recipe so you can join in the fundraising fun!

For the cupcakes:

  • 110g self-raising flour
  • 110g softened butter/margarine
  • 110g caster sugar
  • 2 large eggs, slightly beaten
  • 1 tsp vanilla extract
  1. Pre-heat the oven to 180C/160C fan/Gas mark 4
  2. Line a muffin tray with 12 paper cake cases
  3. In a mixing bowl, beat together the softened butter/margarine and caster sugar until it is a fluffy texture
  4. Gradually whisk the eggs into the mixture
  5. Add the vanilla extract and self-raising flour and fold into the mixture
  6. Spoon the mixture evenly into each paper case
  7. Bake for 15-20 minutes, or until the cupcakes are golden brown (to test the cakes are fully cooked, insert a clean knife into the centre of a cupcake; it’s it comes out clean, they are ready)
  8. Allow the cupcakes to cool on a wire rack before icing. The icing can melt if placed on the warm cupcake

For the icing:

  • 150g softened butter/margarine
  • 300g icing sugar
  • ½ tsp vanilla extract
  • 2 tbsp milk
  • A few drops of your preferred food colouring (optional)
  • Decorations (optional)
  1. Beat the butter until it is soft and sift in the icing sugar
  2. Add the vanilla and whisk together until it is smooth
  3. Gradually beat in the milk
  4. Add the food colouring and continue mixing unit all the mixture if your desired colour
  5. After the cupcakes have cooled, add the icing evenly onto the top. For a professional effect, use a plastic sandwich bag as a piping bag; spoon the mixture towards one corner of the bag, closing tightly and cutting off the corner.
  6. Add any extra decorations you wish.

The funds raised during Cupcake Day will go towards the support of vital research and providing care and support.

“£50 could provide support for five people, for five hours of in-depth support from our Helpline team at a time of crisis. £150 could pay for two people with dementia to attend Singing for the Brain sessions for one year, where they and their carers can come together for an hour each week to sing and dance with music. £610 would pay for a Doctoral Training Centre to run for one day, helping up to eight PhD researchers to carry out ground-breaking study in dementia research.”
